Simple Soup for Maundy Thursday

As we celebrate Holy Week, we thought you might like to join together virtually for a no-frills, yet hearty meal. If you’ve celebrated Maundy Thursday service in the past with us or participated in a mission trip in the 1990’s, you should be familiar with this simple and delicious soup.

If you are like many of us, you are cleaning out your cupboards and freezer, maybe you have these ingredients on-hand already. If you do not have these ingredients on-hand, that's okay. Please do not go out to the store for these specific supplies instead, make a simple meal with what you have on-hand. The idea is to enjoy a meal together before gathering on Thursday, April 9 at 7 pm for Maundy Thursday Worship Service.

This recipe will make enough for 8 servings. You can cut it half. It also freezes great too.

Mission Trip Bean Soup

Ingredients
1 bag dry 15 bean soup mix
Diced ham 1 10 oz. can of Rotel original
3 ribs of celery diced
1 14.5 oz can of diced tomatoes
{You can also add diced onions and garlic if you want to }

Directions
Soak beans overnight, rinse in the morning. Add all the other ingredients and cook on low heat for 4-6 hours until the beans are tender keeping 1- 2 inches of water over the beans at all times. It can also be cooked in a crock pot on high for the same amount of time with the same amount of water.
